Texas Caviar | Pre-Prans with Ruthie

‘Round up your family and friends for some Cinco de Mayo themed Pre-Prans! Ruthie’s back in the kitchen with Eric Sundrup, SJ of The Jesuit Post.

RECIPE

Ingredients

2 roasted red bell pepper
1 bunch cilantro
1/2 sweet onion
1 jalapeño, diced
1 can black eyed peas, drained
1 can black beans, drained
1 can diced tomatoes
some chopped chives
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon garlic salt
1 teaspoon ground black pepper
1/2 cup olive oil
2-3 tablespoons red wine vinegar
< Directions

Dice bell peppers, chop cilantro, dice onion.

Combine first 8 ingredients in a large bowl. Add seasonings and mix again. Drizzle with the olive oil and vinegar and mix until coated.

WHO IS RUTHIE?

Ruthie is a mother of two grown kids and fifth of twelve siblings. A retired yoga instructor, she now lives and works in Los Angeles, CA, serving as Kitchen Manager at the Jesuit Novitiate, in addition to owning and managing Organized Living with Ruthie. As a niece and sister of two Jesuits, her ties to the Society of Jesus and Ignatian Spirituality are life-long.

WHAT IS PRE-PRANS?

Pre-Prans is basically happy hour. Short for preprandial, it’s anything done right before a meal, like having appetizers and drinks. In the Society of Jesus, “pre-prans” is a traditional way that Jesuits who live together make time in their busy schedules to gather as a community.
