Thanksgiving | Pre-Prans with Ruthie
Our favorite host Ruthie Blacksea is back again for Thanksgiving! Enjoy Ruthie’s Sweet Potato and Sausage Skewers with Lemon Garlic Dip and a refreshing High West Lemonade.
Sweet Potato and Sausage Skewers with Lemon Garlic Dip
Lemon Garlic Dip
1 c. mayonnaise
2 tbsp. chopped flat leaf parsley
2 tsp. minced garlic
1 tsp. lemon zest
2 tbsp. fresh lemon juice
Salt and pepper to taste
Make this first, as it is better very cold. Mix really well in a non-metal bowl. Cover and refrigerate.
Skewers
2 sweet potatoes, scrubbed and cut into 1” cubes 2 tbsp. olive oil
1/2 tsp. salt
1/2 tsp. pepper
3 – 4 smoked sausages, cut into 1/2” cubes or pieces
Wooden picks
Preheat oven to 450. Toss sweet potato pieces with oil, salt and pepper. Bake for 15-20 minutes until golden, turning once.
Cook sausage cubes in a non-stick skillet until browned. Drain on paper towels.
Skewer one potato piece and one sausage with the picks, repeat with the remaining potatoes and sausages. Serve with the Lemon Garlic Dip.

High West Lemonade
To make this simple syrup, simmer the following for one hour and reduce to 3 cups.
2 cups sugar
4 cups water
½ lemon
10 cloves
3 cinnamon sticks
healthy pinch nutmeg
1 vanilla bean
vodka (optional)
After reduced, add 1 ½ cups of lemon juice (approximately 10 lemons) and then add 2 cups water to dilute to taste, strain and chill.
Mix 3 ounces of above lemonade with 1 ounce of vodka (optional), add splash of pomegranate juice and a sprig of mint.

WHO IS RUTHIE?
Ruthie is a Catholic mother of two grown kids and fifth of twelve siblings. A retired yoga instructor, she now lives and works in Los Angeles, CA, serving as Kitchen Manager at the Jesuit Novitiate, in addition to owning and managing Organized Living with Ruthie. As a niece and sister of two Jesuits, her ties to the Society of Jesus and Ignatian Spirituality are life-long.
