Strawberry & Cheese Canapes | Pre-Prans with Ruthie

Try this easy recipe to start your Mother’s Day parties. Sautéed strawberries add a sweet twist.

RECIPE

Ingredients

6-7 strawberries

1 tablespoon coconut oil (or other cooking oil)
plain crackers
1 wedge boursin cheese
Balsamic vinegar
handful fresh basil

Preparation

Hull the strawberries and slice 1/4” thick.

Heat oil over medium-high heat in a non-stick pan. When hot, add strawberries and sauté until soft (not brown!). Remove from pan and drain on a paper towel.

Chiffonade basil.

Assemble by spreading a bit of cheese on a cracker and top with a couple slices of strawberry, followed by a drop or two of balsamic vinegar and a few ribbons of basil.

WHO IS RUTHIE?

Ruthie is a mother of two grown kids and fifth of twelve siblings. A retired yoga instructor, she now lives and works in Los Angeles, CA, serving as Kitchen Manager at the Jesuit Novitiate, in addition to owning and managing Organized Living with Ruthie. As a niece and sister of two Jesuits, her ties to the Society of Jesus and Ignatian Spirituality are life-long.

WHAT IS PRE-PRANS?

Pre-Prans is basically happy hour. Short for preprandial, it’s anything done right before a meal, like having appetizers and drinks. In the Society of Jesus, “pre-prans” is a traditional way that Jesuits who live together make time in their busy schedules to gather as a community.
